Una Pizza Napoletana

Our visit to Una Pizza Napoletana was a trip. No doubt about it, this place has the best pizza I’ve had in the City….but would it fucking kill them to offer a little something to eat while you sit and wait? Our pizza took about 35 minutes and we didn’t care so much, except for that whole  – people come to a restaurant because they’re hungry part .
I’ve been procrastinating for over a year to get my napletano sourdough starter going and the crust at Una got me inspired.    This video is close to pizza dough porn:  Naturally Risen The source for Italian sourdough cultures is: http://sourdo.com. The companion book is packed with info and makes the process seem a little daunting …we’ll see how it goes. I think it just looks harder than it is.
I built a foam proof box and have started the cultures. This is going to work.
